Restaurant & Bar Manager - Bonny Moon Beach Club

Location: Grand Cayman , GCM

We are accepting applications for the following position:

RESTAURANT & BAR MANAGER 


The Restaurant & Bar Manager is responsible for the restaurant and bar daily shift operations and supervision of staff. Position assists with promoting the venue, menu planning, maintaining standards, assists servers on the floor during peak periods and manages property liquor inventories and controls.

RESPONSIBILITIES INCLUDE:

  • Leads and implements the agreed upon creation of the venue’s beverage program and restaurant activations.
  • Understands beverage control including days on hand, perpetual inventory, bar pars, portion control, costs controls, beverage potentials, mix of sales analysis for beverage, issue & returns, food standards, and month end inventory.
  • Monitors adherence to all liquor control policies and procedures.
  • Comprehends budgets, operating statements and payroll progress reports as needed to assist in the financial management of department.
  • Participates in the management of department's controllable expenses to achieve or exceed budgeted goals.
  • Manages to achieve or exceed budgeted goals.
  • Ensures compliance with all Bar/Lounge policies, standards and procedures.
  • Maintains food handling and sanitation standards.
  • Manages contractors to ensure upkeep and maintenance of restaurant and bar area including equipment.
  • Ensures compliance with Health regulations (includes assurance that all appropriate certifications are achieved).
  • Establishes relationship with supplies, vendors and with the local market.
  • Manages inventories according to budget and business levels.
  • Assists with developing menus and promotions as necessary.
  • Determines employee training needs to accomplish goals and implements plan.
  • Trains employees on liquor control policies and procedures.
  • Supervises staffing levels to ensure that guest service, operational needs and financial objectives are met.
  • Ensures employees understand expectations and parameters.
  • Strives to ensure guest and employee satisfaction while maintaining the operating budget.
  • Displays leadership in guest hospitality; exemplifies excellent customer service and creates a positive atmosphere for guest relations.

QUALIFICATIONS:

  • Minimum 3 years experience in a managerial position within a restaurant and bar role.
  • Minimum 3 years experience working in a fast-paced bar driven environment.
  • Ability to handle multiple tasks and work well in environment with time constraints.
  • Ability to troubleshoot effectively.
  • Detail-oriented with good organizational skills, performing work accurately and efficiently.
  • Demonstrated excellent communication skills, both oral and written.
  • Ability to thrive in a busy, fast-paced team environment as well as work independently and prioritize tasks effectively.
  • Must enjoy working outdoors with the ability to tolerate weather extremes.
  • Must be able to work a flexible schedule including working outside of normal business hours i.e. evenings, weekends and public holidays, as needed.

WORKING CONDITIONS/PHYSICAL REQUIREMENTS:

  • May be exposed to a noisy, humid and hot environment. Temperatures will vary depending on weather and location of work being conducted (indoors/outdoors).
  • Frequent bending, reaching, pushing, pulling or otherwise move objects.
  • Frequently lift 25lbs, occasionally lift 50lbs.
  • Ability to stand for long periods of time
  • Ability to walk throughout work shift to accomplish tasks

 

Remuneration: US$55,000 - US$70,000 per annum

Benefits: In accordance with Cayman Islands law
